Description

Avocado Deviled Eggs bring fresh, creamy twist to the classic appetizer everyone loves. Rich avocado replaces some mayo for lighter, healthier option that still delivers all the flavor.


Ingredients

  • 6 large eggs
  • 2 ripe avocados
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice, freshly squeezed
  • Salt to taste
  • Black pepper to taste
  • Smoked paprika for garnish

Instructions

1. Place eggs in cold water and bring to boil over medium heat. Once boiling, reduce to simmer for 9-12 minutes. This gives perfectly cooked yolks that are creamy, not chalky.

2. Transfer eggs to ice bath until completely cool. Peel carefully under running water for easiest removal. Slice each egg lengthwise and scoop yolks into mixing bowl.

3. Mash avocados and egg yolks together until smooth with no lumps. Add mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix everything until completely combined and creamy. Taste and adjust seasoning.

4. Fill each egg white generously with avocado mixture. Use piping bag for fancy presentation or just spoon it in for casual gatherings. Either way works perfectly.

5. Sprinkle smoked paprika over each filled egg for color and flavor. Arrange on serving platter and serve within 2-3 hours for best color.

Notes

Use perfectly ripe avocados only. They should yield slightly when pressed. Underripe avocados won’t mash smoothly.

Add lemon juice immediately after mashing avocado. Waiting even 5 minutes means mixture starts turning brown.

Press plastic wrap directly onto surface of leftover filling before refrigerating. This prevents air exposure that causes browning.

These are best within 2-3 hours of assembling. Avocado can brown even with lemon juice if they sit too long.

Store in airtight container up to 2 days maximum. Scrape off any browned layer before serving.
