Ingredients
1/4 cup apple cider vinegar
2 tbsp smoky barbecue rub
2 tbsp brown sugar
1 tsp Dijon mustard
1.5 lbs chicken tenderloins
1 small red onion, thinly sliced
1/4 head cabbage (about 8 oz)
1 medium carrot, peeled
1 medium Granny Smith apple
1/4 cup light mayonnaise
1 tbsp lemon juice
1/2 tsp black pepper
8 flour tortillas (10-inch)
Instructions
Whisk together apple cider vinegar, BBQ rub, brown sugar, and Dijon mustard in a bowl.
Place chicken tenderloins in the marinade and let sit for 10 minutes.
