Description

Ingredients
2 medium sweet potatoes, peeled and diced
2 cups cooked chicken (grilled or fully cooked, shredded)
ยผโยฝ cup pork-free BBQ sauce
1 small red onion, finely diced
1 cup corn kernels (fresh or canned)
1 cup shredded cheddar cheese (regular or dairy-free)
1โ2 tbsp olive oil
ยฝ tsp smoked paprika
Salt and black pepper
Instructions
Preheat oven to 400ยฐF
Heat 1 tbsp olive oil in oven-safe skillet
Sear sweet potatoes, season with salt, pepper, and paprika
Roast 15โ20 minutes until browned
Add diced onion, cook 2โ3 minutes
Fold in chicken and BBQ sauce
Stir in corn and cheese
Simmer 5 minutes, then transfer to oven
Bake uncovered 8โ10 minutes until golden
Serve on a platter or cafeteria-style bowls
