Description

A vibrant, no-cook broccoli salad with a creamy dressing, crisp vegetables, and a touch of sweetness. Packed with nutrients and customizable for any occasion.


Ingredients

8 cups broccoli florets (bite-sized)
โ…“ cup red onion (diced)
ยฝ cup dried cranberries
ยผ cup sunflower seeds
1 tbsp olive oil
1 tbsp smoked paprika (as a bacon substitute)
1 cup mayonnaise
3 tbsp apple cider vinegar
2 tbsp sugar
Salt & black pepper (to taste)


Instructions

In a large bowl, whisk mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.
Toss broccoli florets, red onion, dried cranberries, and sunflower seeds in a separate bowl.
Add the dressing to the broccoli mixture and combine thoroughly.
Chill for at least 30 minutes to allow flavors to meld.
Just before serving, drizzle with olive oil and sprinkle with smoked paprika.

Notes

To replace bacon bits, use olive oil and smoked paprika for a smoky flavor.
Store in an airtight container in the refrigerator for up to 2 days.
Add gluten-free croutons or additional vegetables like carrots for variation.
