Ingredients

1 tsp baking soda
½ tsp salt
1½ tsp ground cinnamon
½ tsp ground nutmeg
½ cup unsalted butter (softened)
¾ cup brown sugar
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
1½ cups finely grated carrots
½ cup chopped walnuts or pecans (optional)
½ cup raisins (optional)
4 oz cream cheese (softened)
2 tbsp butter (softened)
1 cup powdered sugar
½ tsp vanilla extract


Instructions

Preheat oven to 350°F (175°C)
Line baking sheets with parchment paper
In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg
In another bowl, cream softened butter with brown sugar and granulated sugar until light
Add egg and vanilla extract, mix well
Stir in grated carrots, nuts, and raisins (if using)
Gradually fold dry ingredients into wet mixture until a soft dough forms
Chill dough for 10 minutes (optional)
Scoop dough into 1½-inch balls and place on baking sheets
Bake for 12–15 minutes until edges are golden
Let cookies cool completely
For frosting, beat cream cheese, 2 tbsp butter, powdered sugar, and vanilla extract until smooth
Spread or pipe frosting onto cooled cookies

Notes

For best texture, ensure butter is softened before mixing
Chilling the dough improves shelf stability during baking
Store in an airtight container for up to 3 days
