Ingredients
1 large flatbread (naan, pita, or store-bought pizza dough)
1ยฝ cups cooked chicken, shredded or diced
ยฝ cup basil pesto
8 oz fresh mozzarella cheese, sliced or torn
2 cups fresh tomatoes (Roma, cherry, or heirloom), sliced
ยผ cup fresh basil leaves
2 tbsp olive oil
Balsamic glaze (optional)
Salt, pepper, and garlic powder (to taste)
Instructions
Preheat oven to 400ยฐF (200ยฐC) with a pizza stone or baking sheet inside.
Brush flatbread with olive oil and spread pesto evenly over the surface.
Top with mozzarella slices, tomato slices, and shredded chicken.
Sprinkle with basil leaves, salt, pepper, and garlic powder.
Transfer to oven and bake until flatbread is golden and crisp, about 12โ15 minutes.
Drizzle with balsamic glaze (if using) once removed from oven.
Let cool slightly before slicing and serving.
Notes
For best results, use warm flatbread from oven with balsamic glaze added after baking.
Rotate the flatbread halfway during baking for even color.
Store leftovers in an airtight container at room temperature for 2โ3 hours or refrigerate for 1 day.
Substitute vegan cheese and pesto for a vegetarian/vegan version.
