Ingredients
- 4 boneless skinless chicken breasts (about 2 lbs)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cheddar cheese soup
- 1 can (14.5 oz) chicken broth
- ยฝ tsp salt
- ยผ tsp Cajun seasoning
- ยผ tsp garlic salt
- 4 cups fresh broccoli florets
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- Fresh black pepper to taste
Instructions
1. Spray slow cooker with cooking spray. Whisk cream of chicken soup, cheddar soup, chicken broth, salt, Cajun seasoning, and garlic salt until smooth.
2. Place chicken breasts in slow cooker in single layer if possible. Pour soup mixture over chicken, ensuring pieces get coated completely.
3. Cover and cook on low 4-6 hours or high 3 hours until chicken reaches 165ยฐF internal temperature.
4. Remove chicken and shred using two forks. Return shredded chicken to slow cooker. Add broccoli florets, sour cream, and cheddar cheese. Stir to combine everything well.
5. Cover and cook on high 30 minutes until broccoli turns tender-crisp and cheese melts completely.
6. Taste and adjust seasoning with salt and pepper. Serve immediately over rice, pasta, or with crusty bread.
Notes
Add broccoli during last 45 minutes instead of 30 for extra-crisp texture.
Stir in cream cheese for even richer, more velvety sauce consistency.
