Description

Skewered grilled chicken coated in buttery garlic sauce and melted parmesan cheese with a hint of fresh lemon creates restaurant-quality flavor in your own backyard.


Ingredients

4 tablespoons butter

3 tablespoons grated Parmesan cheese

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped

1 pinch red pepper flakes (optional)

1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

1 teaspoon Cajun seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Melt the butter in a small saucepan over medium-low heat. Add the grated parmesan, minced garlic, and red pepper flakes if using. Stir gently until the cheese melts into the butter, then remove from heat. Mix in the lemon juice and fresh parsley.

2. Cut your chicken into evenly sized chunks, about 1 to 1.5 inches each. Toss them in a bowl with the Cajun seasoning, salt, and pepper until every piece gets coated.

3. Thread the seasoned chicken pieces onto your skewers, leaving a little space between each piece for even cooking.

4. Preheat your grill to medium-high heat and oil the grates. Place the skewers on the grill and cook for 2 to 4 minutes per side. Baste generously with the garlic parmesan butter as they cook, turning to get nice char marks on all sides.

5. Use a meat thermometer to ensure the internal temperature reaches 165°F. Remove from the grill and let rest for 2 minutes before serving.

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning.

Reserve some garlic butter before basting for drizzling over the finished chicken.

Let chicken come to room temperature for 15 minutes before grilling for even cooking.

If cooking on the stovetop, use a grill pan over medium-high heat.
