Ingredients
8 slices sourdough bread
1 cup fresh spinach leaves
½ cup roasted red peppers, sliced
¼ cup red onion, thinly sliced
½ cup shredded mozzarella cheese
½ cup shredded provolone cheese
¼ cup balsamic vinegar
2 tbsp honey
1 tsp Dijon mustard
¼ tsp red pepper flakes (optional)
Salt and black pepper, to taste
1 tbsp olive oil, for grilling
Fresh basil, for garnish
Instructions
Preheat griddle or skillet over medium heat
Toss spinach, red peppers, and red onion with olive oil
Mix balsamic vinegar, honey, Dijon mustard, red pepper flakes, salt, and black pepper to create a vinaigrette
Layer spinach mixture, cheese, and a drizzle of vinaigrette onto each sourdough slice
Close sandwiches and cook on griddle until golden brown and cheese is melted (3-4 minutes per side)
