Description
These tender asparagus spears are seasoned with butter, Italian herbs, and optional Parmesan, then cooked to perfection in individual foil packets. Works on the grill or in the oven with zero cleanup and no vegetables falling through grates.
Ingredients
1 pound fresh asparagus stalks, trimmed
8 teaspoons butter, cut into small pieces
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon chopped fresh parsley
Cooking spray
Lemon wedges for serving (optional)
2 tablespoons grated Parmesan cheese (optional)
Instructions
1. Preheat grill to medium-high heat or oven to 425°F.
2. Cut 4 large squares of heavy-duty foil and coat each with cooking spray.
3. Hold one asparagus spear and bend gently until it snaps naturally to find trim point.
4. Line up remaining stalks and cut all at the same spot as the snapped spear.
5. Divide trimmed asparagus evenly among the four foil squares.
6. Sprinkle Italian seasoning, salt, and pepper evenly over each portion.
7. Place 2 teaspoons butter pieces on top of each asparagus pile.
8. Fold foil over asparagus and seal all edges tightly by folding and crimping.
9. Place packets on grill and cook for 15 minutes, flipping once halfway through.
10. Carefully open foil packets as steam will escape and stir gently to coat with butter.
11. Sprinkle with fresh parsley and optional Parmesan cheese before serving.
Notes
Choose medium-thickness asparagus stalks for best results.
Double-wrap packets if using thin foil to prevent tears.
Make packets ahead and refrigerate until ready to grill.
Add minced garlic, lemon zest, or red pepper flakes for extra flavor.
Works perfectly in the oven year-round when grilling isn’t possible.
Store leftovers refrigerated for up to 3 days and reheat in microwave.
