Description

Jalapeno peach chicken is a sweet and spicy skillet dinner with tender chicken thighs, fresh peaches, and sliced jalapenos in a sticky peach glaze. This easy one-pan meal comes together in under 30 minutes.


Ingredients

    • 6 boneless, skinless chicken thighs

    • Salt and pepper to taste

    • 1 tsp chili powder

    • 2 tbsp olive oil

    • ยฝ cup peach preserves

    • 2 tbsp apple cider vinegar

    • 2 fresh peaches, sliced (can use frozen or canned in a pinch)

    • 1 jalapeno pepper, sliced


Instructions

Step 1: Season the Chicken

Pat the chicken thighs completely dry with paper towelsโ€”this ensures good browning. Season both sides generously with salt, pepper, and chili powder. Let sit for 5 minutes while you prep other ingredients.

Step 2: Sear the Chicken

Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken thighs and cook without moving for 5-6 minutes until deeply golden brown. Flip and cook another 5-6 minutes. The chicken doesn’t need to be fully cooked yetโ€”it’ll finish in the sauce.

Step 3: Make the Peach Glaze

While chicken cooks, mix the peach preserves with apple cider vinegar in a small bowl. The vinegar balances the sweetness and adds tang.

Step 4: Add Peaches and Peppers

Reduce heat to medium. Add the sliced peaches and jalapeno to the skillet, nestling them around the chicken. They’ll soften and caramelize in the pan.

Step 5: Glaze and Simmer

Pour the peach glaze over everything in the skillet. Cover with a lid and simmer for 10 minutes, or until chicken reaches an internal temperature of 165ยฐF. The sauce will thicken and become sticky.

Step 6: Serve

Transfer chicken to serving plates and spoon the peaches, jalapenos, and pan sauce over the top.

Notes

Remove seeds and membrane from jalapenos for less heat. Use chicken thighs instead of breasts – they stay juicier. Pat chicken completely dry before seasoning for best browning.

Don’t overcrowd pan when cooking chicken or it will steam.

Frozen peach slices work if fresh aren’t available – no need to thaw. Double the glaze recipe if you want extra for drizzling over rice. Store leftovers in refrigerator up to 3 days, reheat gently.
