Ingredients
1 cup dried green or brown lentils
2 cups vegetable broth or water
1 small onion, finely chopped
2 cloves garlic, minced
1 cup grated carrots
1 cup breadcrumbs
1 teaspoon cumin
1 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons olive oil
Optional fresh parsley or cilantro for garnish
Instructions
1. Cook lentils in broth or water until tender and liquid is absorbed
2. Sauté onion in olive oil until soft, then add garlic and carrots and cook until tender
3. Combine cooked lentils, sautéed vegetables, breadcrumbs, and spices in a bowl
4. Mix well until fully combined
5. Form mixture into patties
