Loaded Potato Big Mac Bowl takes everything you love about a classic burger and transforms it into a hearty, satisfying meal built on crispy roasted potatoes. This fun twist on comfort food skips the bun but delivers all the flavors families crave.
Ingredients
For the Potatoes:
1 lb 9 oz potatoes, diced into ยพ-inch cubes
2 tbsp olive oil
1 tsp sweet paprika
1 tsp onion powder
ยฝ tsp salt
ยผ tsp black pepper
For the Beef:
1 tbsp olive oil
1 onion, finely diced
1 lb 2 oz lean ground beef
1 tsp salt
1 tsp sweet paprika
ยฝ tsp onion powder
ยฝ tsp garlic powder
ยผ tsp black pepper
For the Burger Sauce:
1 cup mayonnaise
2 tbsp finely chopped dill pickles
1 tsp Dijon mustard
1 tbsp ketchup
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1–2 tbsp water
For Assembly:
2 cups shredded cheese (cheddar, mozzarella, or blend)
1 head romaine lettuce, shredded
ยฝ cup sliced dill pickles
Instructions
1. Preheat oven to 425ยฐF and line your baking sheet with parchment paper. Toss diced potatoes with olive oil, paprika, onion powder, salt, and pepper in a bowl. Spread in a single layer on the prepared sheet, making sure pieces don’t overlap. Roast for 40-45 minutes, flipping halfway through, until golden and crispy on the edges.
2. While potatoes roast, heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 1-2 minutes until softened. Add ground beef, breaking it into small crumbles with your spatula. Season with salt, paprika, onion powder, garlic powder, and pepper. Cook for 6-7 minutes until beef is browned and cooked through.
3. Combine mayonnaise, chopped pickles, Dijon mustard, ketchup, paprika, onion powder, and garlic powder in a small bowl. Whisk everything together until smooth. Add water one tablespoon at a time, stirring between additions, until sauce reaches a pourable consistency.
4. Shred romaine lettuce into thin ribbons. Slice additional pickles if needed. Grate your cheese blend if using block cheese rather than pre-shredded.
5. Divide crispy potatoes among four serving bowls. Top each portion with seasoned ground beef while it’s still hot. Sprinkle generous amounts of shredded cheese over the beef so it melts slightly. Add shredded lettuce, sliced pickles, and any reserved diced onions. Drizzle burger sauce generously over everything and serve immediately.
Notes
Use an air fryer for faster, crispier potatoes in just 20-25 minutes at 200ยฐC (400ยฐF).
Make burger sauce up to 5 days ahead and store in the fridge.
Store beef, potatoes, sauce, and toppings separately in airtight containers for up to 3 days.
Ground turkey or chicken work as leaner alternatives to beef. Season them a bit more heavily since they’re milder.
