Description

Mint Lemonade delivers an intense, frothy burst of citrus refreshment that puts store-bought versions to shame. Blending whole lemons with their peel creates incredible depth and natural oils, while fresh mint adds cooling aromatics. This Mediterranean-style drink comes together in just 10 minutes.

Ingredients

Scale

2 cups crushed ice

4 cups cold water

2 large lemons, washed and cut into small pieces with seeds removed

Juice of 1 additional lemon

1 bunch fresh mint leaves, stems removed (about 2540 leaves)

1/2 to 3/4 cup sugar, adjusted to taste

Extra mint sprigs for garnish

Instructions

1. Wash lemons thoroughly, then cut into small pieces and remove all seeds. Remove mint leaves from stems—don’t worry about chopping them. Measure out your crushed ice and cold water so everything’s ready to go.

2. Add all ingredients to your blender—crushed ice, water, cut lemons, lemon juice, mint leaves, and sugar. Blend on high speed for 45-60 seconds until the mixture is completely smooth and frothy. You should see a thick, pale yellow mixture with visible bubbles.

3. Set your fine mesh strainer over a large pitcher. Pour the blended mixture through, using a spoon to press and extract as much liquid as possible. The solids will be pretty dry when you’re done—that’s perfect. Add fresh mint sprigs to the pitcher for extra visual appeal.

4. Cover the pitcher and refrigerate for at least 30 minutes to let flavors meld and get extra cold. When serving, you can strain again if you want crystal-clear lemonade, or pour as-is for a slightly cloudy, rustic look. Serve over ice with fresh mint garnish.

Notes

Weak blender? Cut lemons into smaller pieces and finely chop mint before blending.

Taste after blending and adjust sugar or mint before straining—easier to fix at this stage.

Use a potato masher in the strainer to extract every drop of liquid.

Make ice cubes from leftover lemonade for drinks that won’t get watered down.

Add a splash of vodka or gin for an adult version at happy hour.

The peel contains essential oils that create that signature frothy texture and intense lemon flavor.

Store covered in the fridge for up to 3 days. Give it a good stir before serving since some settling is natural.
