Description

This homemade drink combines fresh mint leaves, tangy lime juice, and a touch of sweetness for a beverage that beats anything from the store. Make a big batch ahead for backyard barbecues or pool parties. Add sparkling water right before serving for that refreshing fizz.


Ingredients

Scale

1½ cups water

1½ cups granulated sugar

1½ cups fresh mint leaves

Zest of 4 limes

1¼ cups freshly squeezed lime juice (about 1012 limes)

Mint-lime simple syrup from above

Cold water to fill

Ice cubes

1 cup fresh mint leaves for muddling

Chilled sparkling lime water

Extra lime slices and mint sprigs for garnish


Instructions

1. Combine water, sugar, fresh mint leaves, and lime zest in a small saucepan. Bring everything to a simmer over medium heat, stirring until the sugar completely dissolves. Once it starts simmering, remove from heat and let it steep for 10 to 15 minutes.

2. Pour the syrup through a fine mesh strainer into a bowl or jar. Press down on the mint leaves with the back of a spoon to squeeze out every bit of flavor. Let the syrup cool to room temperature.

3. In a large pitcher or 1-liter bottle, combine the fresh lime juice and cooled mint-lime syrup. Add cold water to fill the container, leaving a little room at the top. Shake or stir everything together and refrigerate until completely chilled.

4. When ready to serve, drop a few fresh mint leaves into each glass. Use a muddler or the back of a wooden spoon to gently press the mint leaves to release their oils.

5. Fill each glass with ice cubes, then pour in the chilled limeade base until the glass is about halfway to two-thirds full. Top off with chilled sparkling lime water for that refreshing fizz. Garnish with a sprig of mint or a lime slice and serve immediately.

Notes

Fresh mint leaves are key. Look for bright green bunches with no brown spots or wilting. Wash them well and pat dry before using.

Freshly squeezed lime juice makes all the difference compared to bottled juice. Roll limes on the counter before juicing to get more juice out.

This recipe intentionally makes the limeade base concentrated and extra sweet so you can dilute it with sparkling water when serving.

Make the syrup a day ahead so it has time to chill completely.

Store the limeade base and sparkling water separately to keep bubbles fresh.

The limeade base stays fresh for up to 5 days in a sealed container in the refrigerator.
