Description

This tropical blend of fresh peaches and coconut cream delivers a refreshing breakfast in under 5 minutes. The naturally dairy-free smoothie fits perfectly into busy weekday mornings when you need something quick and filling.


Ingredients

2 ripe peaches, halved and pitted (about 1½ cups chopped)

â…“ cup coconut cream

1 cup chilled coconut water

2 tablespoons fresh lime juice

2 teaspoons honey

¾ cup ice cubes

Extra peach slices for garnish (optional)

Fresh mint leaves for garnish (optional)


Instructions

1. Cut your peaches in half, twist to remove the pits, and roughly chop them into chunks. Toss them into your blender along with the coconut cream, coconut water, lime juice, and honey.

2. Blend everything on high speed until completely smooth with no chunks of peach remaining. This should take about 30 seconds in a good blender.

3. Drop in your ice cubes and blend again until the ice is completely crushed and your smoothie is thick and frosty.

4. Pour into two glasses, top with a peach slice and mint leaves if you’re feeling fancy, and serve immediately.

Notes

Fresh ripe peaches work best here, but frozen peach slices are a solid backup when peaches aren’t in season. If you go frozen, skip the ice cubes and blend everything together for the same creamy texture.

Coconut cream is the thick stuff you find in cans near the coconut milk, not the sweetened cream of coconut used for cocktails.

The lime juice adds brightness that balances the sweetness of the peaches and honey.

Freeze your peach chunks ahead of time for an extra-thick smoothie without watering it down with ice.
