Ingredients
4 soft taco shells or flour tortillas
1 peach, peeled, pitted, and diced
ยฝ red onion, minced
ยฝ red bell pepper, diced
1 jalapeรฑo pepper, seeded and minced (optional, for heat)
1 cup grated cheddar or Monterey Jack cheese
1 teaspoon lime zest
Instructions
Preheat oven to 375ยฐF (190ยฐC)
Spread ยผ cup cheese on each tortilla shell
Top with diced peach, red onion, red bell pepper, and jalapeรฑo (if using)
Sprinkle remaining cheese over the filling
Place on a baking sheet and bake 12-15 minutes until golden and bubbly
Sprinkle with lime zest before serving
