Description

Pineapple Heaven Cake combines boxed cake mix, crushed pineapple, and cream cheese frosting for a moist tropical dessert. Perfect for potlucks and family dinners with minimal effort and maximum flavor.


Ingredients

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple with juice
  • ยฝ cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • ยฝ cup unsalted butter
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 container (8 oz) whipped topping
  • ยฝ cup shredded coconut (optional)
  • ยผ cup chopped pecans (optional)

Instructions

1. Preheat oven to 350ยฐF. Grease 9ร—13-inch baking dish.

2. Combine cake mix, entire can of crushed pineapple with juice, oil, eggs, and vanilla in large bowl. Stir until smooth (about 2 minutes).

3. Pour batter into prepared pan. Bake 30-35 minutes until toothpick inserted in center comes out clean. Cool completely.

4. Melt butter in saucepan over medium heat. Add sugar and remaining pineapple, stirring for 2-3 minutes until sugar dissolves. Cool completely.

5. Beat cream cheese and powdered sugar until fluffy (about 2 minutes). Fold in whipped topping gently by hand.

6. Spread cooled pineapple glaze over cooled cake. Top with cream cheese frosting. Sprinkle with coconut and pecans if using.

7. Refrigerate at least 1 hour before serving.
