Ingredients
2 cups cooked shredded chicken
1 cup queso dip
1 cup shredded cheddar cheese
1 cup salsa
8 small flour tortillas
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
Fresh cilantro for garnish
Instructions
1. Preheat oven to 350°F (175°C)
2. Mix chicken, queso, cumin, garlic powder, salt, and pepper in a bowl
3. Spread half of the salsa in a baking dish
4. Fill each tortilla with chicken mixture, roll, and place seam-side down
5. Pour remaining salsa over enchiladas
6. Top with shredded cheddar cheese
7. Cover with foil and bake for 20 minutes
8. Remove foil and bake 10–15 minutes until cheese bubbles and turns golden
9. Garnish with cilantro and serve warm
