Description
Skillet Shrimp Fajitas cook faster than takeout arrives at your door with restaurant-quality flavor. Juicy shrimp and colorful bell peppers get tossed in homemade fajita seasoning for amazing taste.
Ingredients
- 1.5 lbs jumbo shrimp, peeled and deveined
- 1 yellow onion, sliced
- 2 bell peppers, sliced
- 1/4 cup olive oil
- 1 lime
- 8 flour tortillas
- 1/2 tablespoon chili powder
- 1/2 tablespoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Combine chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper in small bowl. Mix well and set aside while you prep other ingredients.
2. Toss shrimp with half the seasoning mix, 2 tablespoons olive oil, and juice from half the lime. Let sit while you cook vegetables. Don’t marinate longer than 15 minutes or shrimp gets mushy.
3. Heat 2 tablespoons oil in large skillet over medium heat. Add sliced peppers and onions and sautรฉ 4-5 minutes until softened and starting to caramelize. Transfer to plate.
4. In same skillet, add seasoned shrimp in single layer. Cook 2-3 minutes per side until pink and opaque. Don’t overcook or shrimp gets rubbery and tough.
5. Add peppers and onions back to skillet with cooked shrimp. Toss everything together and squeeze remaining lime juice over top. Cook 1 minute more to heat through.
6. Warm tortillas and serve fajitas immediately with your favorite toppings. The shrimp and vegetables stay hot and flavorful right out of the skillet.
Notes
Don’t overcook shrimp or they get tough.
Use high heat for nice char on vegetables.
Fresh lime juice makes all the difference.
Cook shrimp in single layer for even cooking.
Warm tortillas in dry skillet while shrimp cooks.
