Ingredients
2–3 lbs sirloin steak or beef stew meat, cut into 1-inch cubes
1 packet (1 oz) ranch seasoning mix
1 packet (1 oz) au jus gravy mix
4 tablespoons unsalted butter
6–8 pepperoncini peppers
1/2 cup pepperoncini juice (from the jar)
1 cup beef broth
1 tablespoon minced garlic (optional)
Salt and pepper to taste
2 tablespoons vegetable oil (if searing)
Instructions
1. Heat oil in a large skillet over medium-high heat. Season beef cubes with salt and pepper, then sear in batches for 2-3 minutes per side until browned. This step is optional but adds incredible depth of flavor.
2. Add seared or raw steak bites to the bottom of your slow cooker. Pour in beef broth and pepperoncini juice. Sprinkle ranch seasoning and au jus mix evenly over the meat, followed by minced garlic if using.
3. Cut butter into tablespoon-sized pieces and scatter over the beef. Nestle pepperoncini peppers throughout. Don’t stirโjust let everything layer naturally.
4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours. The steak should be fork-tender and the gravy thick and flavorful when done. Stir once or twice during cooking if home.
5. Give everything a good stir before serving to distribute the rich gravy. Taste and adjust seasoning if needed. Serve hot over mashed potatoes, egg noodles, or rice.
Notes
Sirloin steak works great, but beef stew meat or chuck roast cut into chunks are more budget-friendly.
Searing the meat adds rich color and depthโworth the extra 10 minutes.

For thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons water and stir in during last 30 minutes.
