Description
Snickerdoodle Banana Bread combines two beloved classics with ribbons of cinnamon sugar swirled throughout and a crackly cinnamon-sugar crust on top.
Ingredients
For the Bread:
3 very ripe bananas (about 1½ cups mashed)
â…“ cup melted butter
¾ cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt
1½ cups all-purpose flour
1 teaspoon ground cinnamon
For the Cinnamon Sugar Swirl:
â…“ cup granulated sugar
1 tablespoon ground cinnamon
For the Topping:
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
Instructions
1. Preheat your oven to 350°F and grease your 9×5-inch loaf pan generously. Line the bottom with parchment paper.
2. In a small bowl, mix together â…“ cup sugar and 1 tablespoon cinnamon for the swirl. Set aside.
3. In your large mixing bowl, mash the bananas until mostly smooth. Stir in the melted butter, then add ¾ cup sugar, beaten egg, and vanilla. Whisk for 30 seconds until well combined.
4. Sprinkle the baking soda and salt over the wet mixture and stir thoroughly. Add the flour and 1 teaspoon cinnamon, then gently fold just until barely combined.
5. Pour half the batter into your prepared pan. Sprinkle half of the cinnamon sugar mixture evenly over it. Pour remaining batter on top and sprinkle with remaining cinnamon sugar.
6. Use a butter knife to create 3-4 gentle zigzag cuts through the batter from top to bottom to create swirls. Don’t over-swirl.
7. Mix the topping sugar and cinnamon together and sprinkle evenly over the top of the batter.
8. Bake for 60-70 minutes, until deeply golden and a toothpick inserted in the center comes out with just a few moist crumbs.
9. Cool in the pan for 15 minutes, then turn out onto a cooling rack. Wait at least 45 minutes before slicing.
Notes
Store wrapped tightly at room temperature for 5 days or freeze for up to 3 months.
Use the ripest bananas possible with black-spotted peels for best flavor.
Don’t over-swirl or you’ll lose the distinct cinnamon ribbons.
Fresh ground cinnamon makes a huge difference in flavor.
This bread tastes even better on day two once flavors meld.
Use a serrated knife for the cleanest slices that show off the swirl.
