Description

Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1 cup pecans, chopped

1/2 cup brown sugar, packed


Instructions

1. Preheat the oven to 350°F (175°C).

2. Whisk all-purpose flour, whole wheat flour, baking powder, baking soda, and salt in a bowl.

3. Cream softened butter and granulated sugar in another bowl until light and fluffy.

4. Add eggs one at a time and mix well after each addition. Stir in vanilla extract.

5. Add dry ingredients to the wet mixture alternately with buttermilk. Mix just until combined.

6. Fold in chopped pecans evenly.

7. Pour batter into a greased loaf pan and sprinkle brown sugar on top.

8. Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.

9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

10. Slice and serve warm or at room temperature.

Notes

Toast pecans before adding for deeper flavor.

Make buttermilk by adding 1 tablespoon lemon juice or vinegar to milk and let it sit for 5 to 10 minutes.

Do not overmix to keep the bread soft.

Store leftovers in an airtight container for up to 3 days.

Add chocolate chips or dried fruit for variation.

Freeze tightly wrapped bread for up to 3 months.
