Description

Refreshing keto-friendly tzatziki dip with zesty radishes, cucumber, and fresh dill. Perfect for summer gatherings, healthy snacking, and pairing with grilled meats!


Ingredients

Scale

1 cup plain Greek yogurt (full-fat recommended)

1 cup radishes, finely grated

1 small cucumber, finely grated

2 cloves garlic, minced

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper to taste


Instructions

1. Use box grater to finely grate radishes and cucumber into a bowl.

2. Transfer grated cucumber to clean kitchen towel or several layers of paper towels. Gather edges and twist tightly, squeezing out as much liquid as possible. Repeat with grated radishes.

3. In medium bowl, combine Greek yogurt, squeezed radishes, squeezed cucumber, minced garlic, chopped fresh dill, lemon juice, and olive oil.

4. Mix all ingredients thoroughly until well combined and smooth. Taste and season with salt and pepper to your preference.

5. Cover bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled as a dip with vegetables, pita bread, or as a sauce for grilled meats.

Notes

Full-fat Greek yogurt creates the richest, creamiest texture.

For dairy-free option, use coconut yogurt (unsweetened).

Squeeze vegetables very dry – this is crucial to prevent watery dip.

Make tzatziki 1 day ahead for even better flavor development.

Add pinch of cayenne pepper for subtle heat.

Fresh mint can substitute for or be added with dill.

Add crumbled feta cheese for saltier, more traditional Greek flavor.

Store in airtight container in refrigerator for 3-5 days.

Freezing not recommended – yogurt separates when thawed.
