It is a quick, healthy, and versatile meal that works perfectly for busy weeknights, paired with your favorite salad or roasted vegetables.
Ingredients
2 boneless skinless chicken breasts sliced into 6 thin cutlets
1/2 cup all-purpose flour
2 large eggs beaten
1 cup seasoned breadcrumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking oil spray
Fresh parsley for garnish (optional)
Instructions
Preheat your air fryer to 400 degrees Fahrenheit.
Set up three shallow bowls: one with flour, one with beaten eggs, and one with seasoned breadcrumbs, salt, and pepper.
Pat the chicken cutlets dry with paper towels.
Dip each cutlet first into the flour, shaking off excess, then dip into the egg wash, and finally coat thoroughly with breadcrumbs pressing to adhere.
Spray the air fryer basket lightly with cooking oil.
Place the chicken cutlets in the basket in a single layer without overcrowding.
Lightly spray the tops of the chicken cutlets with oil.
Air fry for 10 minutes, flipping halfway through, until golden brown and cooked through.
Remove carefully and garnish with fresh parsley if desired.
Notes
If using plain Panko breadcrumbs, consider adding 1/2 teaspoon of garlic powder and 1/4 teaspoon of paprika to the mix to add more depth. Ensure you pat the chicken dry before dredging to allow the flour to bond better.
