Description

Air fryer stuffed chicken breast is a spinach and cream cheese filled chicken breast cooked quickly in an air fryer. This healthy dinner delivers restaurant-quality results with a crispy exterior and juicy interior in under 30 minutes.


Ingredients

2 boneless, skinless chicken breasts (about 8 ounces each)

1½ teaspoons olive oil

½ teaspoon salt

½ teaspoon garlic powder

½ teaspoon paprika

¼ teaspoon black pepper

2 ounces cream cheese, softened

¾ cup fresh spinach, finely chopped

3 tablespoons grated Parmesan cheese

2 tablespoons diced tomato

2 cloves garlic, minced

¼ teaspoon black pepper

â…› teaspoon salt


Instructions

1. Combine the cream cheese, chopped spinach, Parmesan cheese, diced tomato, minced garlic, black pepper, and salt in a small bowl until well mixed.

2. Place each chicken breast on a cutting board and cut a deep pocket into the thickest side with a sharp knife, being careful not to cut all the way through.

3. Divide the filling evenly between the chicken breasts and stuff it into the pockets, securing the openings with toothpicks if needed.

4. Rub the outside of each chicken breast with the olive oil.

5. Mix together the salt, garlic powder, paprika, and black pepper in a small bowl, then sprinkle the seasoning evenly over both sides of the chicken.

6. Preheat the air fryer to 375°F (190°C).

7. Place the stuffed chicken breasts in the air fryer basket in a single layer, making sure they do not touch.

8. Air fry for 15–17 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

9. Let the chicken rest for 3 minutes, then remove the toothpicks before serving.

Notes

Cut the chicken pocket at an angle to create a larger opening that’s easier to fill without tearing.

Pat the spinach dry after chopping to remove excess moisture that can make the filling watery.

Make sure chicken breasts don’t touch in the air fryer basket so hot air circulates evenly around each one.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
