4 thin boneless, skinless chicken breasts
1 cup all-purpose flour
3 large eggs, beaten
11/2 cups panko breadcrumbs
1/2 cup canola oil

2 tablespoons olive oil
1 shallot, finely diced
2 garlic cloves, minced
1/2 cup chicken broth
Juice of 1 lemon
1 tablespoon capers
1 tablespoon fresh rosemary, finely chopped
1 cup cold unsalted butter, cubed
1/2 cup heavy cream


Instructions

Pound the chicken breasts to an even thickness and season with salt and pepper.
Set up a breading station with three bowls: flour, beaten eggs, and panko breadcrumbs.
Dredge each chicken piece in flour, dip into eggs, and coat thoroughly with panko.
Heat canola oil in a large skillet over medium-high and fry chicken until golden brown and cooked through; drain on a wire rack.
Wipe the skillet clean and heat olive oil over medium; sauté shallot and garlic until softened.
Pour in the chicken broth, lemon juice, capers, and rosemary; simmer for 2-3 minutes to reduce.
Lower the heat, stir in the heavy cream, and whisk in the cold cubed butter one piece at a time until emulsified.
