Ingredients
6 bone-in, skin-on chicken thighs
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon salt
0.5 teaspoon black pepper
2 tablespoons olive oil
1.5 pounds baby potatoes, halved
3 tablespoons olive oil
0.5 teaspoon salt
0.5 teaspoon black pepper
4 tablespoons unsalted butter, melted
5–6 garlic cloves, minced
0.5 cup freshly grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon dried thyme or rosemary
2 tablespoons fresh parsley, chopped
Instructions
Preheat oven to 400°F (200°C).
Pat chicken thighs dry with paper towels to ensure crispy skin.
In a small bowl, whisk together paprika, garlic powder, Italian seasoning, 1 tsp salt, and 0.5 tsp pepper.
Rub the chicken skin with 2 tbsp of olive oil and coat evenly with the spice mixture.
On a large rimmed baking sheet, toss the halved baby potatoes with 3 tbsp of olive oil, 0.5 tsp salt, and 0.5 tsp pepper; arrange them cut-side down.
Place the seasoned chicken thighs among the potatoes on the baking sheet.
Roast for 35 minutes.
In a small bowl, combine the melted butter, minced garlic, parmesan cheese, lemon juice, and dried herbs.
Remove the baking sheet, brush the garlic butter mixture over the chicken and potatoes, and continue roasting for 15 minutes or until internal temperature reaches 165°F.
Garnish with fresh parsley before serving.
