Description

This vibrant Hawaiian Chicken Sheet Pan dinner is a fuss-free, one-pan meal perfect for busy weeknights. Featuring tender cubes of chicken breast, sweet pineapple chunks, and colorful bell peppers, all tossed in a savory honey-soy glaze, this dish balances tropical sweetness with earthy flavors. Easy to clean up and full of nutrition, it is a family-friendly favorite that delivers restaurant-quality results in less than an hour.

Ingredients

Scale

2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
2 cups fresh pineapple chunks
1 red bell pepper, chopped
1 green bell pepper, chopped
1 red onion, sliced into wedges
2 tablespoons olive oil
3 tablespoons low-sodium soy sauce
1/4 cup honey
3 garlic cloves, minced
1 teaspoon ground ginger
1 teaspoon cornstarch
1 tablespoon water
1/2 teaspoon salt
1/4 teaspoon black pepper
Green onions for garnish
Sesame seeds for garnish

Instructions

Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or a silicone baking mat.
In a small bowl, whisk together the soy sauce, honey, minced garlic, ginger, and the mixture of cornstarch and water until smooth.
Place the cubed chicken, pineapple chunks, bell peppers, and onion wedges onto the prepared sheet pan.
Drizzle the olive oil over the ingredients and season with salt and pepper, tossing everything together to coat.
Pour the honey-soy sauce mixture over the chicken and vegetable mixture, tossing again to ensure everything is evenly coated.
Spread the ingredients into a single layer on the sheet pan.
Roast for 20-25 minutes, or until the chicken is fully cooked through and the vegetables are tender.
Garnish with chopped green onions and sesame seeds before serving.

Notes

Ensure chicken pieces are uniform in size to guarantee even cooking. If you have extra sauce, you can boil it briefly in a small pan to thicken it further before drizzling over the finished meal. Leftovers can be stored in an airtight container for up to 3 days.
