Instructions

Whisk together honey, soy sauce, rice vinegar, sesame oil, and minced garlic in a small bowl.
In a separate small container, combine the cornstarch and water to create a slurry and set aside.
Slice the chicken breasts into uniform bite-sized pieces and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add chicken to the skillet and sauté until golden brown and cooked through.
Pour the honey-garlic sauce over the chicken and bring to a simmer.
Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens and coats the chicken.
Assemble the bowls by portioning the jasmine rice into four bowls.
Top each bowl with the glazed chicken, broccoli, carrots, edamame, and fresh cucumber slices.
Garnish with sesame seeds, green onions, or a squeeze of lime before serving.
