Description

Italian herb chicken is a seasoned chicken breast seared until golden and finished with garlic and herbs. This simple yet flavorful weeknight dinner comes together in under 20 minutes.


Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped (optional, for garnish)

Lemon wedges, for serving (optional)


Instructions

1. Pat the chicken breasts dry with paper towels and, if needed, pound them to an even thickness for uniform cooking.

2. In a small bowl, combine the Italian seasoning, oregano, basil, garlic powder, onion powder, paprika, salt, and black pepper.

3. Rub the chicken with the olive oil, then coat evenly with the seasoning mixture.

4. Heat a large skillet over medium-high heat and add a drizzle of olive oil if needed.

5. Sear the chicken for 5–6 minutes per side, until golden brown.

6. During the final minute of cooking, add the minced garlic and cook until fragrant, about 30–60 seconds.

7. Continue cooking until the chicken reaches an internal temperature of 165°F (74°C).

8. Transfer the chicken to a plate and let it rest for 5 minutes.

9. Garnish with chopped fresh parsley and serve with lemon wedges, if desired.

Notes

Pat the chicken completely dry before seasoning so it browns properly rather than steaming in the pan.

Pound the chicken to even thickness before cooking so it cooks uniformly without thin edges drying out.

Don’t skip the resting period—it allows juices to redistribute throughout the meat, keeping it tender and moist.

Add fresh garlic in the final minute to prevent it from burning and becoming bitter.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
