Ingredients
1 whole chicken (about 4 lbs/1.8 kg)
1 whole lemon
80 g (1/3 cup) unsalted butter, melted
1 tsp garlic powder
1 tsp smoked paprika
1 tsp salt, plus extra to taste
1/2 tsp freshly ground black pepper, plus extra to taste
4 sprigs fresh rosemary
6 garlic cloves, peeled
3/4 cup (200 ml) chicken stock
1 1/2 lbs (700 g) baby potatoes, halved
1 1/2 cups (350 ml) heavy (thickened) cream
2 tbsp fresh oregano, chopped
1 tbsp fresh tarragon, chopped
1/3 cup (100 ml) non-alcoholic white grape juice or non-alcoholic verjuice
2 tbsp fresh parsley, chopped
Instructions
Preheat your oven to 375°F (190°C).
In a small bowl, whisk together melted butter, garlic powder, smoked paprika, salt, and black pepper.
Pat the chicken dry and stuff the cavity with the lemon, rosemary sprigs, and garlic cloves.
Brush the exterior of the chicken thoroughly with the spice-infused butter mixture.
Place the chicken in a large Dutch oven and arrange the halved baby potatoes around it.
Pour the chicken stock and non-alcoholic liquid into the pot, avoiding the chicken skin to keep it crisp.
Cover and roast for 1 hour and 15 minutes.
Remove the lid, add the heavy cream, oregano, and tarragon to the pot liquid, and roast uncovered for another 30 minutes until the chicken reaches an internal thermometer reading of 165°F (74°C) and the skin is golden brown.
Remove the chicken to a cutting board to rest for 10 minutes before carving.
Garnish the potatoes and sauce with fresh parsley before serving.
