4 boneless, skinless chicken breasts
8 ounces fresh mozzarella cheese, sliced
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and black pepper to taste
3 tablespoons olive oil
2 cups marinara sauce


Instructions

Preheat your oven to 375°F (190°C).
Use a sharp boning knife to cut a pocket into the thickest part of each chicken breast.
Stuff each breast with mozzarella slices and secure the opening with toothpicks if necessary.
Create a breading station: place flour in one bowl, beaten eggs in a second, and a mixture of panko, Parmesan, onion powder, garlic powder, oregano, thyme, salt, and pepper in a third.
Coat each chicken breast in flour, dip into the eggs, then press firmly into the panko mixture.
