Ingredients
2 pounds boneless, skinless chicken breasts
1/3 cup balsamic vinegar
2 tablespoons honey
4 tablespoons avocado oil (divided)
2 garlic cloves, minced
1 teaspoon Italian seasoning
1 tablespoon Dijon mustard
8 oz grape tomatoes, halved
8 oz fresh mozzarella pearls
2 tablespoons fresh basil, finely chopped

Instructions
Pound chicken breasts to an even thickness using a meat mallet.
Whisk together balsamic vinegar, honey, 2 tablespoons oil, mustard, garlic, Italian seasoning, salt, and pepper in a small bowl.
Season the chicken with salt and pepper.
Heat the remaining 2 tablespoons of oil in a large oven-safe skillet over medium-high heat.
Sear chicken for 3-5 minutes per side until golden brown.
Pour the balsamic mixture over the chicken.
Add the halved grape tomatoes to the skillet.
