Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
0.5 teaspoon salt
0.5 teaspoon black pepper
4 tablespoons butter, melted
3 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Italian seasoning
1 pound baby potatoes, halved
1.5 cups broccoli florets
1 bunch asparagus, trimmed
1 tablespoon olive oil (for vegetables)
0.5 teaspoon salt (for vegetables)
0.5 teaspoon black pepper (for vegetables)
Instructions
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
In a small bowl, whisk together the melted butter, minced garlic, lemon juice, and Italian seasoning to create the garlic butter glaze.
Place the chicken breasts on the baking sheet and coat them with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper.
Arrange the halved potatoes, broccoli, and trimmed asparagus around the chicken on the tray.
In a small bowl, toss the vegetables with 1 tablespoon olive oil, salt, and pepper.
Drizzle the prepared garlic butter glaze evenly over both the chicken and the vegetables.
Bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender.
Remove from the oven, let rest for 5 minutes, and serve warm.
Notes
You may substitute chicken breasts for boneless thighs if you prefer extra tenderness. Ensure you trim the woody ends of the asparagus for the best texture. If vegetables are becoming too brown, cover the tray loosely with foil for the final 10 minutes of cooking. Store leftovers in an airtight container for up to 3 days.
