Ingredients
1.5 pounds boneless skinless chicken breasts
1 red bell pepper, diced
0.5 large yellow onion, diced
2 garlic cloves, chopped
0.5 cup natural creamy or crunchy peanut butter
0.5 cup low-sodium chicken broth
0.25 cup soy sauce
1 tablespoon honey
1 teaspoon sesame oil
1 teaspoon chili garlic paste
1 tablespoon fresh lime juice
2 tablespoons fresh cilantro, chopped
Instructions
Place diced red bell pepper, onion, and garlic at the bottom of a 6-quart slow cooker.
Place the chicken breasts on top of the vegetable base.
In a medium bowl, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
Pour the peanut sauce mixture over the chicken breasts.
Cover and cook on low for 4-5 hours until the chicken is tender and fully cooked.
