2 large boneless, skinless chicken breasts
0.5 teaspoon garlic powder
Salt and freshly ground black pepper to taste
1 tablespoon olive oil
2 tablespoons unsalted butter, divided
1 medium sweet or yellow onion, thinly sliced
1 garlic clove, minced
0.5 cup low-sodium chicken broth
1 teaspoon Worcestershire sauce
1 cup full-fat sour cream
Fresh parsley, chopped, for garnish


Instructions

Place the chicken breasts on a cutting board and slice them into thin cutlets to ensure even cooking.
Season both sides of the chicken cutlets with garlic powder, salt, and pepper.
Heat olive oil and 1 tablespoon of butter in a large non-stick skillet over medium-high heat.
Sear the chicken in the skillet until browned and cooked through, about 3-4 minutes per side; remove chicken from the pan and set aside.
Add the remaining tablespoon of butter to the same skillet and add the sliced onions.
Cook the onions over medium heat, stirring occasionally, until soft and deeply caramelized.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and Worcestershire sauce, scraping the bottom of the pan to deglaze.
Reduce heat to low and stir in the sour cream until smooth and warmed through, being careful not to let it boil.
Return the chicken to the skillet to coat with the sauce, garnish with fresh parsley, and serve warm.

Notes

Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F. Using full-fat sour cream is essential to prevent the sauce from curdling. If the sauce becomes too thick, stir in an extra splash of chicken broth.
